Preparation Method :
- Heat oil in a wok. Add salt, shallots, peas and bean curd. Stir fry 1 minute. Pour in eggs.
 - Cook over medium heat until mixture begins to set.
 - Draw outer edges to the center until eggs form a scrambled egg consistency, moist and retaining shape.
 - Sprinkle with soy sauce before serving.
 
INGREDIENTS
- 4 tablespoons Cooking oil
 - 1 teaspoon salt
 - 4 shallots, finely chopped
 - 100 grams peas, blanched in boiling water 1 minute
 - 200 grams bean curd cut in 1 cm dice
 - 10 eggs, beaten
 - 2 tablespoons light soy sauce
