SWEET RED BEAN PANCAKES

Preparation Method :

  • In a bowl sift flour and make a well in the center. Add beaten egg and water and mix to a smooth batter.
  • Heat a frying pan with sufficient butter and make four 20 cm pancakes.
  • When they are cooked on both sides, lift them out onto a flat surface to cool.
  • Spread a quarter of the bean paste onto the center of each pancake, fold in two sides to cover the paste, then fold over the top and bottom to make square parcels.
  • Heat remaining butter in a work and carefully slide in the parcels.
  • Fry over a high heat until they are golden brown on both sides. Turn them out and cut each parcel into quarters.
  • Serve warm, sprinkled with caster sugar.

INGREDIENTS

  • 250 grams plain flour
  • 2 eggs, beaten
  • 300 ml water
  • 100 gram butter
  • 250 gram red bean paste
  • Castor sugar, for sprinkling
