SWEET BEAN PASTE CROQUETTES

Preparation Method :
- Cut bean paste into 16 pieces. Peel sweet potato, slice and steam until tender. Add caster sugar and mash.
 - Mix in glutinous rice flour, adding a little hot water if necessary to make a dough consistency.
 - Roll dough into a sausage shape, and divide into 16 pieces. Pat each piece of dough into a circle.
 - Place a portion of bean paste in the center and shape as a croquette (cork shape). Brush each croquette with cold water and roll in poppy seeds.
 - Heat oil in a pan to the depth of 2 cm. Add six croquette sat a time. Cook over moderate heat 5 minutes turning each roll for even cooking.
 - Avoid overheating the oil, as the croquette may split.
 - Drain well and serve with Chinese tea.

 - 2 tablespoon castor sugar
 - 250 grams glutinous rice flour
 - 5tablespoon poppy seeds Cooking oil, for frying
