LIME MOUSSE WITH MANGO

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Put the fromage frais, lime rind and sugar in a bowl and mix together.
  • Whisk the double (heavy) cream in a separate bowl and fold into the fromage frais.
  • Line 4 decorative moulds or ramekin dishes with muslin (cheesecloth) or cling film (plastic wrap) and divide the mixture evenly between them.
  • Fold the muslin (cheesecloth) over the top and press down firmly.
  • To make the sauce, slice through the mango on each side of the large flat stone, then cut the flesh from the stone. Remove the skin.
  • Cut off 12 thin slices and set aside. Chop the remaining mango, put into a food processor with the lime juice and sugar.
  • Blend until smooth. Alternatively, push the mango through a sieve (strainer) then mix with the lime juice and sugar.
  • Turn out the moulds on to serving plates. Arrange 3 slices of mango on each plate, pour some sauce around.
  • Decorate and serve. 

INGREDIENTS

  • 500 grams fromage frais 
  • Grated rind of 2 lime 
  • 2 tablespoon castor (superfine) sugar 
  • 200 ml double (heavy) cream 

Mango Sauce

  • 2 mangos
  • Juice of 2 limes
  • 8 teaspoon castor (superfine) sugar

To Decorate

  • 8 Cape gooseberries 
  • Strips of lime rind
