SWEET POTATO ROLLS WITH GINGER

Preparation Method :

  • Combine the potatoes, ginger, salt and sugar in a pot, cover with water and bring to a boil. Reduce the heat and simmer until the potatoes are just tender, about 10 minutes. Drain and set aside.
  • Place the dried rice wrappers between two damp, clean dish towels to soften them. Wrap each potato stick in one softened rice paper wrapper.
  • Heat the oil over medium-high heat in a wok or large skillet. When the oil is hot, fry the potato rolls until golden brown.
  • Drain the rolls on paper towels and sprinkle with salt. Serve hot with the Chili Coriander Dip.

INGREDIENTS

  • 2 large sweet potatoes, peeled and cut lengthwise into large matchsticks
  • 6 inch fresh ginger root, peeled and finely sliced
  • Pinch of salt
  • 5 teaspoons sugar
  • 1 packet small dried rice paper wrappers
  • IDHAYAM MANTRA Peanut Oil, for deep-frying
