SWEET SOUR FISH WITH GREEN MANGO

30 minutes

Preparation Method :

  • Heat the oil in a wok over high heat and fry the fish until golden. Remove the fish and drain on paper towels.
  • Add the garlic to the wok and fry until it is browned. Add the sugar and the fish sauce and continue cooking until the mixture is just beginning to caramelize.
  • Add the tomatoes, green mangoes and sugar cane and stir-fry for a few minutes.
  • Add the fish, mix well and cook for another 15 minutes over low heat, without stirring again.
  • Serve garnished with basil and coriander leaves.

 

INGREDIENTS

  • 2 tablespoons Sesame oil
  • 600 grams firm white fish fillet, cut into pieces
  • 10 cloves garlic, peeled and chopped
  • 5 tablespoons palm or brown sugar
  • 4 tablespoons fish sauce
  • 5 tomatoes, quartered
  • 2 small green mangoes, peeled and chopped
  • Sugar cane, cut into matchsticks  
  • 1 small bunch Thai basil leaves
  • 1 small bunch coriander leaves
