STIR-FRIED FISH WITH LEMONGRASS AND HERBS

Preparation Method :

  • Heat the oil in a wok or a skillet over medium-high heat and stir-fry the fish and the garlic until the fish is nearly opaque.
  • Add the chopped herbs, sugar, fish sauce and peanuts and stir-fry for 1 or 2 minutes more, until the sauce reduces slightly, and serve.

INGREDIENTS

  • 3 tablespoons sesame oil
  • 500 grams firm white fish fillets, roughly chopped
  • 5 cloves garlic, peeled and chopped
  • 1 stalk lemongrass, finely chopped
  • 1 small bunch Thai basil leaves, finely chopped
  • 6 kaffir lime leaves, finely chopped
  • 1 tablespoon palm sugar or dark brown sugar
  • 3 tablespoons fish sauce
  • 4 tablespoons unsalted roasted peanuts
