Preparation Method :
- Heat a wok or skillet over medium heat and add the rice. Stir the rice constantly, until it is golden brown.
- Remove the toasted rice from the wok and pound it in a mortar or grind it coarsely in a food processor.
- Heat the oil in the wok over medium-high heat and stir-fry the pork, garlic, shallots and lemongrass until the meat starts to brown.
- Add the bean sprouts and the toasted rice. Cook for 1 minute then add the fish sauce, sugar, kaffir lime leaves and the herbs. Stir-fry 1 minute more, then serve.

- 2 tablespoons sesame oil
- 300 grams ground pork
- 3 cloves garlic, chopped
- 2 small red shallots, peeled and chopped
- 3 stalks lemongrass, sliced
- 150 grams bean sprouts
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 5 kaffir lime leaves, thinly sliced
- 1 bunch mint leaves
- 1 bunch coriander leaves
- 1 bunch mint leaves
