Preparation Method :
- Cut the veal bones into small pieces.
- Put into a baking dish with sides, in a single layer. Roast for 40 minutes in a pre-heated oven.
- Add the vegetables and roast for 30 more minutes. Remove from the oven.
- Transfer the bones and vegetables to a sauce pan.
- Add water and simmer for 3 to 4 hours (uncovered).
- Add the herbs and simmer 1 hour longer.
- Strain the mixture and cool it to room temperature by immersing the pot in a bath of ice water.
- Serve it warm.

- 4 carrots, chopped
- 2 stalk of celery
- 2 parsnips, chopped
- 2 bay leaves
- ½ bunch of parsley
- 10 sprigs of thyme
- 2 teaspoon peppercorns
