Preparation Method :
- Heat the groundnut oil in a deep frying-pan.
- Now add the mutton and stir-fry for a minute.
- Add soy sauce to the pan and mix it well.
- Transfer the mutton to a separate plate and allow it to cool for 10 minutes.
- Put the grated ginger, celery, spring onions, carrots, above prepared mutton, cabbage, rice, barley in a bowl and blend it well.
- Add all the other seasoning ingredients like lemon zest, oyster sauce, sugar, salt and white pepper and stir well to combine.
- Lay three spring roll wrappers one on top of the other and position so that the corners are pointing upwards, downwards and to the sides.
- Make corn-flour paste by dissolving with the hot water.
- Place 2 tablespoons of the above prepared filling into the centre of the wrapper, brush each corner of the wrapper with the corn flour paste and then bring the 2 opposite corners on the sides together and, keeping your finger on the edges, bring the bottom corner towards the middle and then roll the pastry up tightly towards the top corner.
- Tuck the top edge in and seal it with the corn flour paste.
- Repeat the same procedure with the rest of the remaining spring roll wrappers and the rest of the filling.
- Heat the ground nut oil in the frying pan for frying the spring roll.
- Fry the spring rolls until golden brown.
- Drain the excess oil and serve it hot.

- 100 grams cooked mutton, Shredded
- 40 grams shredded cabbage
- 1 medium carrot, finely sliced
- 10 grams celery, finely sliced
- 1 large spring onion, finely sliced
- 20 grams barley, cooked
- 20 grams rice, cooked
- ½ lemon, grated zest only
- 1 teaspoon light soy sauce
- 2 teaspoon oyster sauce
- 1 tablespoon fresh ginger (peeled and grated)
- 2 teaspoon light soy sauce
- 2 teaspoon sugar
- 6 ready-made large spring roll wrappers (thawed if frozen)
- 1 table spoon corn
- 1 tablespoon hot water
- 1 tablespoon Cooking oil for filling
- Cooking oil for deep-frying
- Salt to taste
- White pepper (freshly ground) to taste
